Chilli Paneer is one of the popular recipe from the Indian Chinese cuisine. There are many ways of making it. You can make it dry, semi dry or a gravy version. In this post I am sharing the semi dry version.
Ingredients :- For frying paneer : 1. 250 gm paneer 2. 1 tbsp red mirchi powder 3. 1/2 tbsp turmeric powder 4. Salt as per taste. 5. 1 tbsp oil 6. 1-2 tbsp corn starch For Chilli Paneer Sauce : 1. 1 tbsp oil 2. 1 tbsp ginger 3. 1 tbsp garlic finely chopped 4. 2 dry red chilli finely chopped 5. 1 tbsp celery roughly chopped 6.1 medium onion cut in quarters 7.1 small capsicum cut in cubes 8.1 tbsp soy sauce and green chili sauce 9. Sliced 1 tbsp green chilli sauce 10. 1 tbsp Sweet & Sour sauce 11. 1 tsp sugar 12. 1 tbsp corn flour slurry (corn flour + water mixed) 13. Handful of spring onion, sliced (white with Green part) Recipe:- 1. Take 250gm of paneer. 2. Cut the paneer in long pieces and take them in a bowl. 3. Add 1 tbsp red mirchi powder, 1/2 tbsp turmeric powder and salt as per taste. 4.Add 1 tbsp oil and mix the paneer properly. 5. Add the corn starch to the paneer cubes and coat well and mix well coating all the paneer cubes evenly. 6. Now in a pan take 2-3 tbsp oil and put it on medium flame to fry the paneer pieces. 7. When the oil is hot, place the paneer pieces and fry them in all sides to get a golden Crispy surface. 8. Transfer this paneer on a brown paper to remove excess oil. 9. Heat oil in a pan, add ginger, garlic, whole red chilli and celery. Mix well and sauté for a few minutes. 10. Add onions and capsicum, sauté till onions are fragrant. 11. Add soy sauce and toss well to coat. Add fresh red and green chillies, sauté for a few seconds. 12. Add green chilli sauce, sweet & sour sauce, mix and toss well. 13. Add little water, sugar and cook till it melts. 14. Add some more water and the corn flour slurry, cook till the sauce thickens. 15. Add the fried paneer cubes and spring onions, toss well. 16. Garnish with spring onions and toasted sesame seeds. 17. Serve immediately.
