There are some days when only a bowl of Creamy Red Pasta can make you feel alive. This is a super easy recipe which can be prepared in 30 mins to fulfill needs of your Italian taste buds.
For Boiling Pasta:
Ingredients:
- Penne Pasta 1.5 cup
- Water for boiling
- 1 tsp oil
- Salt as per taste
Steps:
- Take water in a pot for boiling the pasta.
- Pur raw pasta, a pinch of salt and some oil and boil for 7-8 mins or until AL dente.
- Drain excess water and let pasta cool down.
- Add a punch of salt, black pepper and oil. Toss well the pasta.
For fried veggies:
Ingredients:
- Brocolli 1/2 cup
- Mushroom 1/2 cup
- Bell peppers 1 cup
- Lemon juice 1 tsp
- Oil 1 tsp
- Garlic 1 tsp (optional)
Steps:
- Put a pan on high flame. Add some oil, garlic and sauté for 2 mins.
- Add veggies, salt and black pepper, Oregano and chilli flakes, and sauté for 2-3 mins.
- Squeeze one lemon and sauté for 1-2 mins. Keep the pasta aside.
For peri-peri mix :
Ingredients:
- Red chilli powder 3 tsp
- Black salt 1 tsp
- Cinnamon powder 1/4 tsp
- Ginger powder 1/4 tsp
- Oregano 1 tsp
- Powdered sugar 1 tsp
- Salt 1/2 tsp
Steps:
- Mix all the ingredients and peri-peri mix is ready.
- Store it in air-tight container.
To make Pasta:
Ingredients:
- Butter 3 tsp
- Wheat flour / all purpose flour 3 tsp
- Milk 600-800 ml
- Salt and pepper
- Peri-peri mix 2 tsp
- Stir fried veggies
- Boiled pasta
- Chesse 1/2 cup
- Tomato ketchup 3 tbsp
Steps:
- Set a pan on medium flame and add butter.
- As butter melts, add flour, stir and cook for 2-3 mins ultil it's golden brown.
- Add milk in batches and whisk continously to avoid any lumps. Cook it for 2-3 mins until the sauce thickens.
- Add peri-peri mix and salt and pepper as per taste, stir the sauce an cook for 2-3 mins.
- Add veggies, pasta, chesse and cook for 2-3 mins.
- Add tomato ketchup and add milk if the pasta thickens.
- Cook for 2-3 mins and pasta is ready to be served.
- Serve fresh hot pasta with home made garlic bread.
