If you are a gujarati then sev usal is your Sunday breakfast. Sev usal is a very famous Gujarat street food from Vadodara. Sev usal is a mixture of vatana and spices making it scrumptious. Its a crowd pleaser. Easy to make sev usal, all you need to do is prepare everything before hand toss everything while serving and serve immediately.
Ingredients:
- 2 cups soaked safed vatana (dried white peas)
- salt as per taste
- 1. 5 tbsp oil
- 1 tsp mustard seeds (rai)
- 1/4 tsp asafoetida (hing)
- 1/2 cup finely chopped onions
- 1/2 cup finely chopped tomatoes
- 1. 5 tsp chilli powder
- 1/2 tsp coriander (dhania) powder
- 1/2 tsp turmeric powder (haldi)
- 1 tsp lemon juice
- 4 tbsp spring onions for garnishing

Recipe:
- Make sure to soak the vatana's 6-8 hours before cooking sev usal. Alternatively, vatana's can be steamed cooked if soaking couldn't be done.
- In a pressure cooker take vatana, pinch of salt and enough water, mix it well and pressure cook for 3 whistles.
- Open the lid only after steam has escaped. Now, drain it and keep it aside.
- Heat the oil in a deep non-stick bowl. Add the mustard seeds and asafoetida and sauté on a medium flame for 30 seconds.
- Add the onions and sauté on a medium flame for 1-2 minute.
- Add the tomato puree, mix well and cook for 2-3 minutes, while stirring occasionally.
- Now add spices: chilli powder, coriander powder, turmeric powder, salt and ½ cup of water. Mix well and cook on a medium flame for 3-4 minutes.
- Now, add the cooked vatana to the bowl. Stir it and add lemon juice and ½ cup water. Mix it properly and cook mix well and cook for 5-10 minutes, while stirring occasionally. Keep aside.
- Gujarati Sev Usal is ready. Serve it hot with ladi pav and garnish with spring onion and sev.
