We cook it in so many ways. One of the easiest ways you can cook it is in form of paneer bhurji. This is one of the first paneer dishes that I learned to cook, just because it was so simple. Bhurji means scrambled so here the paneer is crumbled and then cooked with onion, tomato, spices. This dish comes together rather quickly and tastes great with roti or paratha or with toast. Ingredients: (4 serves) - Fresh Paneer - 250 gms (homemade paneer prefpreferredf not using homemade paneer, then grate it) - Oil – 2 tbsp - Butter – 2 tbsp - Cumin – 1 1/2 tsp - Ginger garlic green chili paste - 2 tbsp - Onion finely chopped – 1/2 cup - Turmeric – ½ tsp - Chilli powder – ¾ tsp - Coriander powder – 1tbsp - Tomato finely chopped – 1 cup - Salt as per taste - Kasturi methi powder – a pinch - Coriander chopped – handful
Recipe: 1. Heat a fresh pan and add oil and butter. 2. Sprinkle cumin and once it pops add garlic, ginger, chili paste. Sauté it for a minute. 4. Add the chopped onions. Cook onions for 2 mins. 5. Add Turmeric powder, chili powder, coriander powder. Mix it and add in tomatoes along with some salt to taste. 6. Sauté tomatoes for 2-3 mins and then add the fresh paneer and cook them for 5-10 minutes. 7.Sprinkle with kasturi methi powder and freshly chopped coriander. Serve hot with tortillas.
