Potato HOT Sandwitch

Lockdown which happened March 2020 gave me an opportunity to stay indoors and revisit my passion for cooking. I have come long from looking over moms shoulder while she is preparing food to making my own dishes for dinner.


So, to challenge myself, I have accepted a 15 day Cooking Challenge starting from today.

15 days - 15 unique dishes.


Here's the first one.


Potato Hot Sandwich


I stated with an easy recipe to begin this challenge on a positive note.


Step by step Potato Sandwitch Recipe to make the staple food a star in your tonight's dinner. All you need are some boiled potatoes, spices, butter and bread.


Use any bread which you like or prefer for making these potato sandwiches. Use brown or whole grain bread for a healthy option. Homemade bread is better.


I have made these potato sandwiches with brown bread.


I have used the same recipe for the spiced potato stuffing masala, which I always make for Aloo paratha.


These potato sandwiches can be served with tomato ketchup or coriander chutney. They do make for a good breakfast/brunch or snack option.


Here's the recipe:(2-3 serves)


1. Boil 2-3 potatoes.


2. Peel, mash the boiled potatoes and then add all the spices ( salt, chilli powder, Turmeric powder, coriander powder) and mix well.


3. Butter the bread slices. Spread some of the spiced aloo masala or stuffing on the buttered bread slices.


4. Top with grated cheese if required.


5. Cover with the remaining buttered bread slices. spread butter on the top of the slices.


6. In a pre heated grill or toaster, place the potato sandwich carefully with the buttered side facing down, making sure your hands don’t touch the grill (be careful when doing this. If you cannot do this then just skip the above step. Instead spread butter once the sandwiches are grilled). Now spread butter on the top side which is facing you.


7. Grill/toast for 2-3 minutes till the potato sandwiches are crisp and golden.


8. Serve potato sandwich with tomato ketchup or coriander chutney.
